Humanizing is the process of adding a random and more humanized feel.  When entering MIDI data in via the mouse and when using snap, its possible for the music to sound too computerized and artificial.

Right click on a MIDI clip or MIDI data in the Piano Roll and select "MIDI Editing" followed by "Humanize..."  This brings up the Humanize window.
